Today I bring you I Can’t Believe it’s Not Muffins. In the epic battle of sweet tooth vs empty kitchen, I found myself concocting a successful mess. Here how it’s done. 1. Waffle mix. You can use a box mix, or a recipe, either will do. Since Publix recently had a bogo on waffle mix, I just happen to have a box on hand. I used 2 cups Waffle mix to 1 1/4 cup water. 2. Grease muffin tin, or use liners. My suggestion would be to use liners for super easy clean up, or grease muffin tin and dust with powdered sugar, or flour. I didn’t have a problem with sticking, but always better safe then sorry. 3. Now spoon in nice layer on mix, about 1/4 of the way full. 4. Squeeze in your jelly, jam, or preserve of choice. Also try fresh berries and fruits! You’ll be glad you did. 5. Use the rest of your mix to cover the filling you picked. You don’t really have to worry about over filling, these are not going to rise up huge, like cupcakes, or muffins.Not worries, they are still soft, and super yummy. 6. Bake at 350 for 30 to 35 mins 7. Remove from pan and enjoy. Eat as is, top with ice cream, syrup, or sprinkle with powdered sugar, the options are endless. Also, they go down great with a tall glass of milk. Yum-yum!
